    各地冬至吃什么？每一口都是团圆味

    　　今日迎来冬至节气。民间素有“冬至大如年”的说法，足见人们对这个节气的重视。各地至今仍保留着丰富多彩的习俗，特色美食更是必不可少。快来一起解锁冬至滋味↓ 　　冬至米饺香 一口咬住团圆味 　　在福建宁德霞浦县，大家会在冬至这一天包一笼形似元宝的米饺。米饺有什么讲究？ 　　在福建霞浦县水门畲族乡的青岙村，清晨的农家小院便热闹了起来，家人们一起忙着准备冬至美食——米饺。 　　制作地道的米饺，当地人有着自己的讲究。比如要提前上山采收新鲜的山姜叶，还要下地挖出带着泥土气息的白萝卜。 　　萝卜带回家后，用刨丝器擦成丝，随后摊放在竹匾进行自然风干。在冬日暖阳下，醇厚的香味也被锁在丝丝缕缕的金黄里。 　　包米饺前，先要完成馅料的炒制工序。首先将晒干的萝卜丝放入锅中焯煮，捞出沥干备用，将猪肉与蒜头一同爆香，再依次加入芹菜、蒜苗及备好的萝卜丝，反复翻炒至食材融合，这样制成的馅料方能兼具干爽质地与醇厚入味的口感。备好了馅料，就可以制作米饺皮了。当地村民遵循传统配比，将糯米粉与晚米粉均匀揉合，以此确保成品米皮兼具软糯口感与不粘牙的特性。 　　水门畲族乡青岙村村民 吴燕平：一般是用80%糯米加上20%晚米，混合之后用沸水和面反复揉匀，一直到光滑不粘手就可以了。 　　备好料，一家人就围坐在一起，一团面，一撮馅，指尖轻轻一收，谈笑间米饺便包好了。包好的米饺，被整齐地码放在新鲜的山姜叶上。山姜叶自带的清新香气，能为米饺赋予别具一格的味觉层次。置于蒸笼加热，浓郁香气逐步充盈厨房空间。 　　米饺寓意着团圆与收获，是霞浦冬至必备美食，也承载着一家人的团圆记忆。 　　汤圆裹甜蜜 团圆好滋味 　　冬至时节，汤圆是宁波人餐桌上必不可少的一道美食。传统的宁波汤圆讲究可不少，不仅全程纯手工制作，还有独特的风味秘诀藏在其中。 　　在浙江宁波鄞州区的方桥村，冬至时节，走在街巷里，空气当中弥漫的都是糯米香和芝麻香，两者合二为一，就成了宁波人冬至必吃榜单的榜首——汤圆。 　　村民戴瑞花分享了宁波汤圆的制作步骤：首先需挑选新鲜糯米，浸泡至少半天，随后放入石磨磨成粉。 　　紧接着，将芝麻倒入热锅翻炒。炒好的芝麻捣碎后，与切得细碎的猪板油、白糖一同拌匀——这是做宁波汤圆最关键的步骤，让它融化后口感香甜醇厚。 　　村民李玲玲介绍，宁波话里“汤圆”与“团圆”发音相近，在冬至这一天吃汤圆，代表一家人团团圆圆。 　　煮熟后的宁波汤圆甜糯弹牙，糯米、芝麻香醇浓厚、层次分明。小小汤圆里裹着家家户户的幸福，就像满满的芝麻馅，藏不住，甜蜜蜜地溢了出来。 　　来源：央视新闻客户端 【编辑:叶攀】|dfg|
