    冬至吃饺子？汤圆、羊肉汤、赤豆糯米饭、鱼生表示不同意

    　　中新网北京12月21日电(记者 上官云)21日，冬至节气来临。朋友们，你们知道这个节气有哪些不一样的饮食风俗吗？ 　　在古代，冬至并不是一个简单的节气。它是传统的“四时八节”之一，也是一个重要的时间节点，又称“冬节”“亚岁”。冬至是感怀祖德、祭祀祖先的日子，民间还有在此时向长辈赠送鞋袜的风俗。 　　或许正是因为地位如此重要，相较于小雪、大雪等节气而言，冬至在饮食等方面的风俗要更为丰富一些。汤圆、饺子、羊肉汤，以及赤豆糯米饭等，都是此时颇为应景的美食。 　　饺子原来是“娇耳”？ 　　俗语说“冬至不端饺子碗，冻掉耳朵没人管”。冬至吃饺子，是中国北方地区的传统民俗。在寒冷的冬天，吃上一碗热气腾腾的饺子，再来一碗饺子汤，别提多舒坦了。 资料图：活动现场工作人员正在煎巨型饺子。　陈超 摄 　　关于这个风俗，山东社会科学院文化研究所研究员郑艳讲了一个故事：民间传说，冬至吃饺子的民俗与“医圣”张仲景有关。 　　张仲景是古代名医。隆冬时节，他看到有不少人冻伤了耳朵，便专门舍药为人们治疗冻伤，把羊肉、辣椒和祛寒的药材放在锅里煮。 　　当羊肉等煮到一定火候之后，就把它们捞出来切碎，当做馅料，再用面皮把这些馅料包起来，做成形似耳朵的“娇耳”下锅煮熟，分给大家，这药就叫“祛寒娇耳汤”。 　　人们吃了“娇耳”，顿觉全身温暖、两耳发热。从冬至起，张仲景天天舍药，一直持续到大年三十。乡亲们冻伤的耳朵被治好了，欢欢喜喜地过了个好年。 　　从此以后，每到冬至，人们也模仿着制作“娇耳”，为了跟药方有所区别，就改称“饺耳”，后来其名字演变为“饺子”，慢慢地，冬至这天吃饺子的风俗便流传了下来。 　　一碗汤圆，幸福团圆 　　汤圆是元宵节标志性的美食。那你是否知道，不少人家也会在冬至时吃汤圆？ 资料图：做好的汤圆很有色彩感。　泱波 摄 　　郑艳说，在江浙一带，冬至应节的食品更多的是汤圆，人们也把冬至所吃的汤圆称为“冬至团”或“冬至圆”，用糯米粉做成。这种风俗在史料中也可以得到验证。 　　据《清嘉录》记载：“有馅而大者为粉团，冬至夜祭先品也；无馅而小者为粉圆，冬至朝供神品也。”意思是说，冬至的汤圆一般会分为粉团和粉圆两种，大小各不相同。 　　而在闽南地区，这种“冬至团”又被称作“冬节丸”或“冬节圆”。她介绍，冬至前夕，家家户户要“搓丸”。等到冬至早晨，先以甜丸汤敬奉祖先，然后全家再以甜丸汤为早餐。 　　一般来说，冬至吃汤圆主要取其甜蜜幸福、团圆美满之意。郑艳介绍，正如民间所说“冬至大如年”，旧时人们把这一天当年过，所以团聚非常重要，冬至祭祖有地方也用汤圆。 　　为啥要吃赤豆糯米饭？ 　　冬至时节的美食，当然不是只有饺子和汤圆。例如，江南水乡有冬至之夜全家吃赤豆糯米饭的风俗。 资料图：冬至时节，市民在餐厅吃羊肉、喝羊汤。中新网记者 周毅 摄 　　此外，粤地还有冬至有吃“鱼生”的习俗。郑艳解释，“鱼生”在古代称为“脍”或“鲙”，其实也就是生鱼片。清代有一首《竹枝词》便记述了广州人过冬至的情形。 　　上述《竹枝词》写道：“雪花从不洒仙城，冬至阳回日日晴。萝卜正佳篱菊放，晶盘五色进鱼生。”后又注云：“冬至日，以鱼脍杂萝卜、菊花、姜、桂啖之，曰食鱼生”。 　　她介绍，此时吃鱼生大概源自人们对于阴阳转换的认识，即冬至时节阴极而阳始至，据记载，有鳞的鱼儿喜欢游到水面上，是属“阳”的，正所谓“冬至一阳生”，吃鱼生刚好应景。 　　与此同理的，还有冬至吃羊汤的风俗。羊肉味甘、性温，暖中祛寒，适合冬天食用。在山东滕州，冬至这天要喝羊肉汤，晚辈还要给长辈送诸如羊肉等礼品。(完) 【编辑:胡寒笑】|dfg|
